Toronto Cuisine project


One of the key recommendations in our DNA Toronto project was to implement a 'symbolic action' of an original Toronto cuisine. Culture is an important association for places and food in particular. This is very interesting because Toronto is a very young city with not enough history to have its own authentic cuisine culture; however, my point is that the art of being good ancestors is to develop new traditions in our own life time for which future decedents can be beneficiaries of. Anyhow we connected with Chef David Chrystian of Victor Restaurant who is well-known local talent recognized by The National Post as one of the city’s top 10 chefs. Together we formulated food that symbolizes Toronto's cultural pluralism. For example we created 'the Toronto spice' which is a perfect blend of spices from around the world.
